Macambo: authentic white chocolate

The gastronomic laboratory of Food Idea Lab presents what they consider to be authentic white chocolate.

Is all cacao dark, which cacao species are found in tropical rainforests? These are some of the questions that the Food Idea Lab team asked themselves while researching new products of Amazonian origin, and it was there, among the indigenous peoples of the region, that we found our answer: the Macambo or Theobroma Bicolor.

Unlike cocoa beans, which turn dark after fermentation, macambo beans remain white and have a pleasant aroma of nuts and tropical fruits. It is a food with high nutritional value and great gastronomic potential.
