The Sensory Table, the result of two years of research carried out by ITAINNOVA in collaboration with the Huesca Hotel Association, represents a significant milestone in the intersection of artificial intelligence and the hospitality industry.

This tool, designed with an innovative approach, focuses on analysing and interpreting the emotions of diners in restaurants in order to evaluate new dishes or new ways of presenting them. 

The Sensory Table uses artificial intelligence to interpret the emotional reactions of customers. This analysis capability is achieved through a special device that captures diners' gestures and facial expressions during their dining experience. The main objective is to provide restaurants with valuable data on how customers react to different aspects of their visit, from the presentation of the food to the service they receive.
