Jeferson García will tell us that Colombia has 50% of the world's páramos, mountain ecosystems that develop above the Andean forests and are characterised by a year-round cold climate and mostly volcanic soils.
This is the basis of his restaurant Afluente, which promotes the link between Colombian territory and the country's traditional larder.
