Back to the future
The future of food for Mads is going back to basics. That’s what he's doing here at ILIS, and how we've been cooking for centuries. He calls it Back To The Future because it’s essentially thinking about preparing and eating food how we did thousands of years ago — We’re bringing the Caveman into the present-day through combining ancient techniques with modern methods-, he says.
