Jang: the heart of Korean cuisine (Hansik)

Jangs are basic fermented condiments in Korean cuisine.

In this talk, Mingoo Kan will discuss the role and importance of jangs (ganjang, doenjang and gochujang) in Korean cuisine, and how they are used in the kitchen of his restaurant, Mingles.

Jang, which has traditionally played a central role in traditional Korean cuisine, is analysed in terms of its modern applications, which extend to desserts and contribute to the core of Korean cuisine.
