The contemporary Nordic vision of preservation techniques.
Preservation techniques, once a means of survival, have been used throughout the Nordic countries, a historical development necessary for people to survive the long, harsh winters of the northern hemisphere.
In this talk, Nicolai Norregaard will explain how and why preservation techniques are used in his restaurants today, demonstrating that tradition and innovation can go hand in hand.
