Vegetable salted products

The path of research opens the door to salted vegetable products.

A few months ago, Juan Guillamón and his team of chefs embarked on a research project to experiment with two of the most representative pillars of Murcian gastronomy: cured meats and vegetables. 

The ultimate aim of this research is to give value to these two elements and, as a result, look for botargas, salted and pickled products from the vegetable garden, in order to incorporate them into the gastronomic proposals of his restaurant.
