The new Nikkei cuisine: beyond Peru

Three of the most representative chefs of contemporary Japanese cuisine will take the stage at Madrid Fusión to present the new flavours that Japanese cuisine has to offer the world.

Nikkei cuisine, the meeting of two great cuisines, Peruvian and Japanese, is currently enjoying great international recognition. A journey that began a century ago with the first Japanese immigrants who arrived in Peru, but whose great promoter in the world was Nobu Matsuhisa. Then came Micha Tsumura with Maido, recognised as one of the best restaurants in the world. 

Today, a new generation of Peruvian chefs living in the United States is taking Nikkei cuisine in new directions and winning renewed international acclaim.
