Dani Ochoa proposes to talk about the problem of the use of mushrooms and fungi and why they are rarely used in haute cuisine. 

At Montia, they try to give importance to mushrooms that are not very commercial, and they try to move away from conventional treatments. They use them as spices, flavour enhancers or to cure meat.
