Masterclass on the traditional Murcian meat pie.

Murcian meat pies are a traditional pastry from the Golden Age, mentioned in the decrees of Charles II. They have two doughs. The topping is an oddly shaped spiral pastry in concentric rings made with lard, which crisps like a wafer. 

Inside are minced beef, chorizo, hard-boiled egg and spices. It is a spectacle to behold. Puff pastry identical to the Neapolitan sfogliatelle.
