Citrus fruits are no strangers to the world of confectionery, and Paco Torreblanca is well aware of this when he devotes his talk to the role they play in his patisserie.
Oranges, lemons, grapefruits, mandarins... There are several citrus fruits that help pastry chefs make their creations unique. Used since time immemorial, citrus fruits can also be used in patisserie. The Valencian pastry chef will offer us his particular vision.
