The basic idea of this talk is to see how patisserie has evolved from the personal point of view of Ginés Nicolás since he started in this world more than 10 years ago.

Using the same dessert, Ginés will show how it has evolved over time: from the classic creations (pastry cream, garnache...) to the use of pectins or gels based on citrus fibres, which give it a more futuristic look. All accompanied by packaging and branding tailored to the occasion.
