All the Mexicos of Quintonil

Mexico is not one, it is many. Jorge Vallejo and his team present a journey that examines the regionality of Mexican gastronomic culture and its life in communities and habitats over several hundred years.

In addition to the emblematic dishes that distinguish us, we will explore techniques, ingredients and climates, some of which are still unknown to many, but which have been decisive in shaping the identity of regions and communities.

We are thinking of dividing the presentation into 4 concepts and in each one we will prepare a dish that will be served at Quintonil.
