La Tasquería is celebrating its first ten years. Javi Estévez will talk about this journey and its philosophy, #SomosCasqueros.

Usually kitchens of different styles have made an effort to give visibility to the product, respecting its appearance and, of course, its flavour. In the case of La Tasqueria, we have been working for more than 9 years with the opposite objective, extolling the product but in a different way, hiding it, concealing it and making it unrecognisable in some cases thanks to the cooking techniques they use. 

‘We cook casquería even for people who don't like casquería’, that has been their motto during the last few years. This has been their motto over the years and in this presentation they want to confront the raw product with the processed product, already unrecognisable, playing with its textures, appearance, shape and appearance.
