The vinegar kitchen

Using the technique of vinegar making, Juanlu and the LÚ team will be presenting different types of vinegar that they make for their dishes with the mother vinegar of Sherry, called 'Angel' in this country.

On stage at Madrid Fusión, they will be using this technique to make different types of vinegar from vegetable liqueurs, and they will also be showing us how they use a good wine that is more than 30 years old to make a vinegar that adds a spectacular flavour to recipes.
