Narisawa and his vision of a new Japanese pop culture
Contemporary Japanese popular culture is famous for anime, video games and fashion. In this talk, Narisawa will analyse this traditional Japanese popular culture and how street food is closely linked to it.
There are a number of dishes that Japan, an island nation, has adopted from abroad in modern or earlier times, and which have since evolved in unique ways. Take ramen, one of the most popular noodles in the world, and discover the secret of the 'complex umami flavour' that is the essence of ramen's deliciousness.
Looking back at Narisawa's culinary evolution, you will also examine the chef's perspective and the culinary demands of the coming era.
