The Japanese chef's cuisine reflects the subtle and ever-changing nature of Kyoto through its micro-seasons.
Inoue will prepare a live winter creation inspired by 'Mizusawa kooritsume', one of the 72 micro-seasons. This period signifies the height of winter, marked by ice covering the surface of the stream.
