The "colineta"

Colineta is a very typical dessert from the city of Huesca, more than a century old, popularly known as 'Colineta Nevada' and based on a whipped pastry made with almonds, eggs and sugar.

Raúl Bernal traced the history of this dessert from the Basque Country to Huesca and discovered that Teodoro Bardají published a recipe for colineta or almond tortada in 1935. Now he has made a chocolate version of it and that is how Teodoro was born, a sponge cake with an almond and chocolate base in homage to Bardají, one of the most important figures in Aragonese cuisine.
