In this talk, Agustín Ferrando Balbi will show us the challenges faced by a chef who comes from the melting pot of cultures of the New World to find his own voice far from home.
The chef will tell us about his self-referential cuisine and the path he has taken to find his own cuisine in a geographically and culturally distant country.
