At DSTAgE they have been working for years on zero waste as one of the central axes of their philosophy.

The study and use of different techniques has led them to look at products in their entirety and understand their composition and functionality. As a result, they have developed their own flavour enhancers, which they use implicitly in their dishes or even make the protagonists of the dishes themselves.
