Pedro Aguilera's presentation will focus on the deep link between the land and the cuisine of Mesón Sabor Andaluz, showing how natural cycles and a commitment to local producers form the basis of a sustainable and honest gastronomic offer. 

From the Sierra de Cádiz, the restaurant focuses its dishes on vegetables, relegating animal proteins to a secondary role, in an effort to honour the roots, the environment and the know-how of the farmers. To achieve this, they work with Extiercol, a pioneering agro-ecological movement that empowers rural communities while promoting traditional flavours and sustainable practices.
