Chickpeas from Madrid: the challenge of diversity
This presentation will offer different views on a humble but versatile product: chickpeas.
It will discuss new cultivation techniques for chickpea mixes, the beneficial effects of pulses on soil health and their impact on ecosystem and food sustainability, among other visions.
Innovative gastronomy will also be challenged to reflect on the chef's role in agricultural sustainability and the health of the planet.
