Samuel Moreno, chef at the Michelin-starred El Molino de Alcuneza, Guadalajara, will be at Madrid Fusión to give a talk on how the bread service is handled at a gastronomy restaurant. With experience as a chef and baker, Moreno will home in on the importance of bread as a mainstay of the territory and signature flours as another ingredient in the kitchen.
