An educational talk by Stephanie Vastel, from France's Ecole Internationale de Boulangerie, for entrepreneurs in the sector, to teach all the requirements for setting up a bakery: from business logic to mental strength and work solidity. All the requirements to create a viable, profitable business, with clear work methods. An interesting talk "to avoid the usual pitfalls", the speaker hints.
