The Spirit of Ukraine in one dish
As an ambassador of the Ukrainian Gastronomic Community Ksenia expands the boundaries of native Ukrainian cuisine, bringing a daring new notion to the traditional dish.
Based on childhood memories and familiar tastes of «folk» cuisine, she adds a personal twist and modern techniques and presents neoclassical catfish borscht with porcini mushrooms. Carefully twists her family heritage and love to the lard.
