Gianluca Fusto will talk about his personal concept of praline, which is summed up in complex recipes, essential ingredients and which become personal journeys into one's own memories. And about the true and original meaning of "dessert": from the Latin "disservice", focusing on chocolates as the main course of a restaurant menu.
