In this talk, Paula Prandini will present Brisa Carioca, a creation conceived for Madrid Fusion 2026 which brings the spirit of Rio de Janeiro to the world of contemporary pastry.

Drawing on current trends such as reduced sugar content, hybrid textures, natural fermentation and cultural authenticity, the proposal champions daytime and brunch confectionery inspired by Brazilian biodiversity, tropical ingredients, and the unique relationship between the people of Rio de Janeiro (cariocas) and the sea, light, and breakfast as a celebration.

Rather than a traditional dessert, Brisa Carioca is a sensory experience combining layers, freshness and emotional memories of coconut, mango, coffee, cereals and native honeys to offer a bright, light and contemporary interpretation of Rio de Janeiro. It is designed to be enjoyed at the start of the day or around the dinner table.
