Starting afresh: cooking with awareness

During the pandemic, van Kranen developed a new relationship with ingredients. He spoke to over 150 local farmers, and each conversation altered his perception of cooking. However, one visit in particular left a lasting impression on him: his visit to Jan Dirk from De Groote Voort, the Remeker cheesemaker. Jan Dirk taught him the importance of taking responsibility and viewing one's work as part of an ecosystem rather than just a product. 

There, he realised that awareness is not about perfection, but about connection. This connection comes with responsibility. He could have chosen to work only with farmers like Jan Dirk who are environmentally conscious, but instead he decided to eliminate dairy products altogether. Not as a protest, but as a creative limitation.

This marked the beginning of Flore, born of consciousness, shaped by limitations, and guided by creativity. He will talk about this process at Madrid Fusión.
