From coconut to lamb in Southeast Asia
Chele will talk about his new line of work, Gallery by Chele, which involves taking a local product and combining it with research, technique, tradition and innovation to create a menu based on that product.
In this case, he will talk about the coconut, which is an essential ingredient in the Philippines and Southeast Asia, where it is used in many different ways. The menu is called 'The Tree of Life', as in the Philippines, every part of the coconut is utilised and it plays a vital role in the lives of Filipinos. Through fermentation and other biotechnologies, various products are developed to increase its sustainability.
Chele will also present Asador Alfonso, a project that aims to promote Spanish cuisine around the world by combining tradition and innovation.
