In this presentation, Joan and Jordi Roca from the renowned El Celler de Can Roca will explore the intersection between sweet and savoury through an innovative sensory experience.

The Roca brothers will discuss desserts inspired by savoury dishes, as well as savoury dishes reinterpreted from desserts. In doing so, they will demonstrate how the traditional boundaries of cuisine can be blurred to create new flavour and texture experiences. The session will immerse the audience in the restaurant's creative philosophy, where taste memory and cutting-edge techniques combine to challenge perceptions and expectations.
