Andrea Martín, revelation restaurant manager at Madrid Fusion
She has been awarded for “her ability to manage and optimize service” at the Tragatá restaurant, located in Ronda (Málaga)
It's not all about cooking at Madrid Fusion Alimentos de España. A restaurant is the kitchen, the R&D team, production and dining room, something that is becoming increasingly important. To promote this idea, the 2nd 'Revelation floor' Award was presented at the closing ceremony, which in 2025 recognized the work of Andrea Martín, head waitress of the Tragatá restaurant, located in Ronda (Málaga). “I want to thank you for giving visibility to the dining room,” said an emotional Andrea after receiving her award for “her ability to direct and perfect service in restaurants.”
Martín is front of house manager at chef Benito Gómez's more informal restaurant, which has an older brother in Ronda. The chef also owns the Michelin-starred Bardal, where the award winner also worked. Andrea has a degree in Tourism and took over the family restaurant in Granada at the age of 21. After training in restaurant management at the Hurtado de Mendoza public catering college and working at Aponiente and Bardal, she is now at the front of Tragatá Málaga.
The finale of this award had a local stamp, as of the six finalists, in addition to the winner, there was also Pilar Navajas, from La Milla. Along with her, Camino Estrada, from the Ansils restaurant (Huesca); Martín Juncal, from Ca l'Enric (Gerona); Eli Gomes, from the Manero Group (Alicante and Madrid); and Felicia Guerra, from Ausiàs (Pedreguer, Alicante) were just a step away from the award. Andrea Martín takes over from Leticia Palomo, head waitress at the Madrid restaurant Ugo Chan.
