Culinary Medicine: Texture at the service of health

In this demonstration workshop led by a chef specialising in modified textures, the Alícia Foundation will show how Culinary Medicine can be applied to help people with dysphagia, a common swallowing difficulty in neurological patients and the elderly. The workshop will teach techniques for preparing tasty, nutritionally complete and visually appealing dishes, including reinterpretations of popular Spanish dishes. These techniques will help to improve the quality of life of those with special dietary needs.
