Thirty years ago, Spanish cuisine stunned the world, and this 23rd edition of Madrid Fusión Food from Spain 2025 aims to analyse the reasons and motives behind the revolution that swept the planet from 1995 onwards and brought the world's gastronomic epicentre here.
The event will be remembered by its main protagonists and many others who continued to be part of the movement or who now carry its banner.
