Madrid Fusión's tribute to Ruperto de Nola's book 'Guisados, Manjares y Potajes' (Stews, Delicacies and Casseroles)
A time to remember part of the history of the Spanish cuisine.
This is the first cookery book in Spanish, printed in Toledo in 1525. It is a translation of the Catalan Llibre del coch by Ruperto de Nola, the cook of King Ferrante of Naples, published in Barcelona in 1520. In Spanish, this treatise and recipe book circulated from the 16th century onwards as Libro de guisados and Libro de cocina in more than 15 editions.
This book defined the taste of modern courts and its recipes have been incorporated into popular cuisine over time. In 2025 he will be honoured at the Madrid Fusión Alimentos de España.
