Madrid Fusión will once again search for the best ham croquette in 2025
Once again, Sánchez Romero Carvajal is organising one of Madrid Fusión's most popular championships.
Haute cuisine in a bite, an opportunity to demonstrate your mastery of this speciality, open to amateurs, chefs and professionals. The winner will be announced after the live competition during the Gastronomy Summit on Monday 27 January 2025.
Until the 8th of December 2024, all professionals who wish can take part in the championship by submitting a single recipe for a croquette with an original and authentic Jabugo flavour, made with 100% Iberian acorn-fed Sánchez Romero Carvajal ham. From all the recipes received, Madrid Fusión Alimentos de España will select six to take part in the grand final of this championship as part of Madrid Fusión Alimentos de España 2025.
Participants must submit a single recipe with a data sheet indicating the ingredients and preparation process, accompanied by a high-resolution photo, minimum 300 dpi, in .jpg format. It is essential that no chemical additives of any kind are used in the preparation of the recipe. This documentation, together with the entrant's identification details (name, email, telephone number and place of work), must be sent by email to daniel@grupgsr.com (for the attention of Daniel).
The jury, made up of renowned journalists and chefs, as well as specialists in the gastronomy and food sectors, will select a single winner.

Sánchez Romero Carvajal is the pioneering brand, originally from Jabugo, founded in 1879, that produces the authentic 100% Iberian Bellota ham. Faithful to an ancestral tradition, the brand has preserved artisans who, generation after generation, have contributed their experience and knowledge, preserving the authentic taste of Jabugo. This artisanal production, free-range farming and natural feeding of the animals mean that the quality of Sánchez Romero Carvajal hams is superior to the Iberian pig standard, as it only produces Brida Negra.
