The IV National Contest 'Cocinando el mar y nuestros ríos' of Madrid Fusión Alimentos de España 2025 is launched.

 

Madrid Fusión Alimentos de España and Mercamadrid are organising the fourth edition of the 'Cocinando el mar y nuestros ríos' competition, which aims to highlight the extraordinary culinary creativity of our country's fisheries and aquaculture products. In this fourth edition, the best recipe and final execution will be selected using one of the most accessible and popular fish in our cuisine, the rainbow trout.

The rainbow trout (Oncorhynchus mykiss) is a fish of the salmonid family, characterised by a broad pink-purple band on each side. It is considered the most farmed species in the world due to its resilience and ease of farming.

It is a continental fish with important nutritional properties. Its good taste and year-round availability are outstanding. Aquaculture rainbow trout is the third most farmed trout in Spain. Most of the trout farms are located on land, in the continental area, because they live in the cold, clean waters of Spanish rivers and lakes. They settle on the banks of rivers or at their sources, taking advantage of the water's gravitational circulation. For this reason, it is a type of aquaculture that is suitable for sustainable and ecological exploitation, as it is able to make efficient use of natural resources and integrate a large part of its facilities into nature itself, as can be seen in several companies throughout Spain that have obtained this certification.

The rainbow trout is one of the main protagonists of the Central Fish Market of Madrid, a huge showcase of fish for the catering industry. Thanks to the companies in the market, there is a wide variety of fish and seafood on offer every day. Key ingredients for a healthy diet in line with the Mediterranean diet. 

The grand final will be held during the 23rd Madrid Fusión Alimentos de España 2024 International Gastronomy Summit, which will be held at IFEMA on 27, 28 and 29 January in Halls 14.0 and 14.1. 

The competition is subject to the following rules:

Entrants must submit a single recipe using rainbow trout as the main ingredient in the dish.

The recipe must include a technical sheet describing the ingredients and the preparation process. It must also be accompanied by a high-resolution photograph, minimum 300 dpi, in .jpg format. 

This documentation, together with the entrant's identification details (name, e-mail address, telephone number and place of work), must be sent by e-mail to daniel@grupgsr.com.

The deadline for receipt of recipes is 23:59 on 1 January 2025.

From all the recipes received, 6 recipes will be selected for the final. 

The final will take place in principle on Monday 27th at the Madrid Fusión Alimentos de España 2024 (Multipurpose Stage, Pavilion 14.0).

The finalists will have one hour to prepare and, if necessary, finish and serve their dishes in front of the jury. The Asociación de Empresarios Mayoristas de Pescado de Madrid will provide samples of rainbow trout for preparation on the day of the final, if requested in good time.

The finalists may not be accompanied by an assistant to help them prepare the dish.

The jury will select a single winner who will receive an original gyotaku as a prize.

Travel and accommodation costs for the finalists will be at their own expense.

Voluntary participation in this competition implies full acceptance of these terms and conditions. In order to be recognised as a valid participant, the requirements set out in these rules must be met.

Mercamadrid reserves the right to publish the recipes of the 6 finalists and their images in its own media and those of the Asociación de Empresarios Mayoristas de Pescados de Madrid (AEMPM), together with the image and details of the authors (catalogues, brochures, website, RRSS, app, etc.), as well as reproducing these recipes in photo shoots or other events, whenever it deems appropriate.
Mercamadrid reserves the right to suspend, postpone, cancel or modify the duration of the competition at any time prior to its conclusion, provided that there are justifiable reasons for doing so, such as a change in the dates of the event by the organisers of Madrid Fusión Alimentos de España in the event of a critical health situation.
