Juanjo López wins the 1st National Steak Tartare Championship

The dish is prepared without the traditional dressing normally used to eat this dish
The “tasquita de enfrente”, by Chef Juanjo López, is the winner of the first edition of the Madrid Fusión Alimentos de España National Steak Tartar Championship. It was one of the new features of this edition. And while it cannot be said that this dish, which became known in 20th-century France, sells more than a croquette, the truth is that it is rare to find a restaurant that does not have it on the menu.
Just as it is rare to find it without much dressing. And this is precisely what has made this Madrid restaurant, a restaurant serving offal and gourmet cuisine with two Repsol suns and recommended by the legendary Michelin Guide to Madrid, which just last year celebrated its 25th anniversary, winning the award in this first edition. “It's a tartar that goes against the grain of what a tartar is, ours has no dressing,” revealed a chef who said that it is not a dish that they have 100% on the menu because they change it a lot.
To win the competition, for which they had no hope because of the dressing, they reflected on the dish and dressed it with the cow's own fat and a little cheese, something that gives it a mellow touch “that is so popular in meats”. In other words, this chef aimed to enhance the flavour of the meat. A secret that led him to beat six other contestants: Lorenzo Franco Chaparro - Zalacaín (Madrid); Ramon Blanch - Pur (Barcelona); Daniel Gómez - Leña (Madrid); Nacho Gadea - Askuabarra (Madrid); Manu Villalba - Fismuler (Madrid).
