Borja Gracia is a chef, entrepreneur and consultant who specialises in Japanese cuisine and culture.
As the founder and head chef of Akita Foods, he has created and directed several Japanese culinary concepts, including the 47 Ronin restaurant, which is recommended in the Michelin Guide.
In 2015, he established Panda Patisserie, Madrid's first Japanese patisserie, where he blends French techniques with Japanese ingredients and sensibilities.
Drawing on his extensive knowledge of Japanese cuisine and culture, acquired through extended stays in Japan, his work has been featured in specialised national and international media.
He also holds a Master's degree in Tourism Management and Gastronomic Heritage from the University of Barcelona.
