With over 50 years' experience in the kitchen, Mauro grew up surrounded by flavours and culinary traditions: his maternal grandmother ran a trattoria, while his paternal grandmother was a professional cook. Although he initially trained as an industrial technician and then studied sociology, he unexpectedly discovered his true calling while cooking for his wife, awakening a passion that would define his professional life.
Together with his sister Catia, he opened Uliassi – Cucina di Mare in the harbour. This humble project quickly became a benchmark. They started with five people in the kitchen and three in the dining room, and that pioneering period marked the beginning of a career in Italian haute cuisine spanning more than 30 years.
Today, his story reflects the union of family tradition, passion, and creativity, and he has established himself as a chef who has transformed his vocation into a recognised and admired culinary legacy.
