Owner of the Catorce Doce bakery in Niko (Murcia)
Ginés Nicolas, known as Niko, was born in Murcia and discovered his passion for pastry-making thanks to a television programme. After graduating from secondary school, he decided to study pastry-making at the Hotel and Catering School in La Flota (Murcia), to become a professional in the sector.
He has worked in the kitchens of Michelin-starred restaurants in San Sebastian, in bakeries in Norway and in the bakeries of world champions such as Josep Maria Rodríguez and his mentor Yann Duytsche in Barcelona, among others.
His professional career brought him back to Murcia as head pastry chef at Odiseo in 2020, and after setting up the pastry shop at the restaurant in the leisure centre, he went into business for himself in the Mercado de Correos, where he runs his pastry shop and bakery, Catorce Doce.
