Pavan and Brutto are chefs committed to sustainability through what they like to call "environmental cuisine".
Since 2017, Chiara Pavan and Francesc Brutto have been the chefs at Ristorante Venissa, located on the island of Mazzorbo in the northern lagoon of Venice. Their cuisine focuses on reducing food waste and promoting the use of local and seasonal ingredients. There is no meat on the menu, only vegetables and fish, using invasive species that have had a major impact on the ecosystem of the lagoon and upper Adriatic in recent years.
Venissa Restaurant has been awarded a Michelin Star and a Michelin Green Star for sustainability. Cheffe Chiara was named chef of the year by L'Espresso in 2019 and international chef by Elle Spain in the same year, and received the Chef Donna award from Identità Golose in 2021. This year, she also won the 'no food waste' award from Gambero Rosso and was named one of the 25 most influential chefs in Italy by Forbes Italia.
