Noelia Tomoshige is the creator of Monroebakes.

Her journey into the world of patisserie began in 2019, when she decided to take a short course in Japanese patisserie at the small school "Fait Beau Tokyo" in the Japanese capital. After this course, she went on to study for the pastry diploma at Le Cordon Bleu Madrid, a diploma that completely changed her life.

Her enthusiasm for this world was so great that she decided to give up the career she had built up over more than ten years in luxury retail to devote himself entirely to pastry-making. She opened Monroebakes in 2021 and was awarded the Premio Pastelero Revelación at Madrid Fusión in 2023.
