Born in Haro, Miguel trained in restaurants in England, Catalonia and the Basque Country, with an outstanding career at Mugaritz, where he became head chef at the age of 32.
His passion for gastronomy comes from his family, as he is a third-generation restaurateur from La Rioja, keeping the flame of tradition alive in Nublo and Los Caños, which are based on the former family business.
He defines himself as an artisan chef who is attracted by challenges and who, in love with his land, returns home to put everything he has learnt into practice in every mouthful.
