This double act of brother-in-law chefs has consolidated landscape cookery in the Huesca Pyrenees.
Josetxo Souto is a self-taught chef who has been working in the catering industry from a very early age, whereas Ramón Aso studied at the Guayante and San Lorenzo Schools in Huesca. Their paths crossed at Casa Román, owned by the family of their future wives.
Their mother-in-law lent them the premises for what would eventually be the Callizo restaurant, and with them working in the kitchen and two sisters - and also their wives - Eva and Pili, working the restaurant floor in L'Aínsa's Plaza Mayor, this has become the ideal place for the best produce of Sobrarbe and the Pyrenees.
There is no shortage of technique and state-of-the-art in their cuisine, albeit on the criteria of climate and nature at all times, with a solid commitment to local produce, heightened by their work with the Un Paso Atrás association in Aínsa-Sobrarbe seeking to retrieve local varieties. This earned them their first Michelin star in 2021.
