José Manuel Marcos is the owner of Crujiente Emotional Pastry and Candela la Gelateria.
Self-taught, José Manuel is a restless entrepreneur with 20 years' experience in the sector, whose tenacity and desire to grow within the profession has led him to win numerous awards and recognition throughout his career.
He currently works as a consultant and gives technical courses to professionals and schools such as the Basque Culinary Centre, Gasma and MoM Culinary. He also teaches at the Paco Torreblanca School in Elda, in the Master's Degree in Haute Patisserie, and is a university expert in ice-cream making at the University of Alicante.
