Pastelería Tolosana is an institution in Aragon, where it has shops in Huesca, Almudévar and Zaragoza. Its bakery has been producing cakes and bread for more than 30 years.
Isidro is the fourth generation of the Tolosana family and joined the business in 2014 after studying patisserie at the Hofmann School and working in international bakeries.
Together with his sister Reyes, a nutritionist and dietician, he has given new impetus to this popular and well-established Aragonese bakery, known throughout the country for its Trenza de Almudévar, a flaky pastry that their father and uncle started making before they were born, inspired by their travels in Central Europe.
