Recognised as one of Miami's most imaginative and progressive chefs, Diego Oka uses the cuisine of the sea to transform and enhance traditional Peruvian recipes, adding a touch of sophistication and refinement.
Gastón Acurio was his teacher and mentor. She met him 22 years ago by chance in a supermarket and has been working with him for 18 years. He came to Miami from Peru to take over La Mar by Gastón Acurio at the Mandarin Oriental Hotel and has made a name for himself with a cuisine that is both Peruvian and Japanese, true to his family's roots.
His menu celebrates the authentic and diverse flavours of Peruvian gastronomy, ranging from high-end Novo Andean cuisine to Asian-Peruvian fusion and traditional seafood cebiche. He shares his experiences on social media, which has made him one of Miami's biggest influencers.
