Andreas Caminada
Chef at Schloss Schauenstein*** ( Fürstenau, Grisons, Switzerland)
With a deep connection to his homeland, Andreas Caminada has worked tirelessly to put Fürstenau, “the smallest city in the world” on the global culinary map and to give something back to the industry he loves.
Andreas Caminada grew up amongst the Swiss Alps of Graubünden. In 2002, he took over Schloss Schauenstein, a 17th century castle in Fürstenau and turned it into a restaurant, where it quickly gained international recognition and was awarded three Michelin stars and 19 Gault Millau points. His culinary signature is using local ingredients to create innovative combinations and subtle flavors with an artistic aesthetic. In 2022, longtime Caminada Group chef, Marcel Skibba became partner & executive chef.
His IGNIV restaurants in Bad Ragaz, St. Moritz, Zurich, Andermatt & Bangkok, combine fine dining with a unique sharing concept. In 2018, “Casa Caminada,” a guest house serving regional dishes was opened. Next came vegetarian restaurant “Oz,” which means "today" in Romansh. The produce served here comes directly from the 2-hectare castle gardens.
In 2016, Caminada created the “Fundaziun Uccelin” together with his wife, Sarah. Uccelin provides young chefs and service enthusiasts an opportunity to immerse themselves in leading institutions on all continents, with over 100 global restaurant & producer partners. The foundation is financed by private patrons, donors, and charity events.
