Cobo Estratos is in charge of evolutionary cuisine. A project in which past and present are contextualised in the kitchen.
Miguel Cobo, originally from Santander and adopted son of Burgos, began his chef career in 2004 after completing his studies, and did this at several leading restaurants in northern Spain.
His first job was at El Vallés, his family's hotel-restaurant in Briviesca in Burgos province, and in 2015 he decided to open his first restaurant Cobo Vintage in Burgos, offering modern fare featuring the Cantabrian Sea and popular Burgos recipes. After earning a Michelin star in the space of only 15 months, he set to work on what is now his new project, Cobo Estratos.
