The second generation of bakers, he has always striven to preserve tradition and the profession.
From a very early age he worked alongside his family at the bakery until he launched himself into industry alongside Pere Gallés, introducing the technology of frozen dough and pre-baked bread to Spain 31 years ago, with Europastry.
He is now working on a line of artisan bread known as CAVA, using km 0 ingredients and giving priority at all times to zero carbon footprint sustainability.
Cereal is his research unit, a unique centre in Europe in the Bakery sector, where new ideas arise through top-quality foodstuffs which are then produced by the European plants.
